Chef Salas has been fine-tuning the recipes served at Nativo’s for years, including the cioppino he creates by infusing fennel and saffron and just the right amount of red chilies that gives an intriguing spice on the palette. Chef Salas takes great pride in respecting the traditions of the past while integrating contemporary designs and ingredients that create new interpretations. Chef Salas oversees everything from menu design to staff training, ordering of ingredients, recipe development, and the crafting of Nativo’s impeccable Italian cuisine. Salas joined Chukchansi in October 2007 and previously worked at Caesars Tahoe, Harrah’s & Harvey’s.
